This is because the yolk and egg white cook at different temperatures, making it difficult to achieve the right balance. But new research has revealed a method for boiling eggs that could solve this age-old problem.

Why is it difficult to boil an egg?

An egg has two main parts: the yolk and the white. The yolk cooks at about 65°C, while the white requires a temperature of about 85°C. Typically, when an egg is boiled at 100°C, the white is cooked thoroughly, but the yolk hardens. However, if cooked at a lower temperature, the yolk remains soft and the white undercooked.

Scientific method of boiling eggs

A research team led by Pellegrino Musto, a scientist at Italy's National Research Council, has developed a new method called periodic cooking. This method involves cooking eggs at varying temperatures for a total of 32 minutes, alternating between boiling water at 100 degrees Celsius and lukewarm water at around 30 degrees Celsius.

This process keeps the yolk temperature constant at around 67 degrees Celsius, while the white undergoes varying temperatures. The result is a creamy and smooth yolk, and the white is thoroughly cooked, neither too hard nor sticky. Researchers examined the egg's texture, taste, and chemical composition using modern techniques and found that this method yields better results than traditional boiling.

Does it have any benefits?

This method is considered beneficial not only for its taste but also for its health. Research has found that eggs cooked this way are higher in polyphenols. Polyphenols are micronutrients with antioxidant and anti-inflammatory properties. According to one study, people whose diets contain high amounts of polyphenols have a lower risk of heart disease, cancer, and neurodegenerative diseases.
