Tomato Halwa Recipe

Material

  • Tomatoes – 10-12
  • Sugar – 2 cups
  • Ghee – half a cup
  • Cashews – 20
  • Raisins – 2 teaspoons
  • Green cardamom – 6
  • Cloves – 4
  • Basil leaves – 1/4 cup
  • Rose petals – 1/4 cup

Halwa recipe

Step 1: First, thoroughly wash fresh tomatoes. Remove the tops, make a small cut in the bottom, and blanch them in boiling water for 2-3 minutes. When the skin begins to peel off, remove them, peel them, and remove the seeds. Now set aside the remaining parts of the tomatoes—the pulp and juice.

Step 2: Now grind cardamom with 1 teaspoon of sugar to form a fine powder. Meanwhile, add 2 teaspoons of ghee to a pan and fry cashews and raisins until they are cooked through. Remove them and set them aside in a bowl for later use. Also, wash the rose petals and basil leaves thoroughly and chop them finely.

Step 3:  Prepare the syrup by adding a little sugar and half a cup of water to a separate pot. Heat ghee in a pan, add cloves, and add the tomato pulp. Cook over low heat until the tomatoes have evaporated all their water and thickened.

Step 4: Now increase the heat and slowly add the hot syrup to the tomatoes, stirring constantly. When the mixture thickens and begins to leave the sides of the pan, it's ready.

Step 5: Finally, add cardamom powder, basil, and rose petals. Top with roasted cashews and raisins and serve the tomato pudding hot.
