Most people like to drink chilled beer. The reason behind this choice is science. A recent research published in Matter Journal explains why chilled beer tastes so good. Researchers have studied the behaviour of water and the ethanol molecules present in alcoholic beverages and have explained the reason why chilled beer tastes better.

In the research, it was observed that the taste of ethanol molecules is changing according to the temperature of water. Speaking to The Telegraph, Professor Li Jiang, one of the authors of the research, said, 'Our research results have strengthened the view that chilled beer is more liked. The lower temperature further enhances the unique characteristics of the beer, making it more palatable for many drinkers.'

While studying the water and ethanol molecules present in beer, researchers observed that ethanol molecules take on specific shapes at different temperatures in different drinks. When low-alcohol beverages such as beer are kept at low temperatures, the ethanol molecules assume the shape of a pyramid.

On the other hand, if the temperature of alcoholic beverages with higher alcohol content is slightly higher then the shape of the ethanol molecules in them is chain-like.

"When the temperature drops, the ethanol molecules come closer together, which makes chilled beer taste better," says Jiang. They say that pyramid-shaped ethanol molecules taste more refreshing than chain-shaped molecules.

Impact of climate change on beer

Earlier, in another research conducted on beer, it was revealed that climate change is going to affect beer also. A research published in the scientific journal Nature Communications said that climate change will increase the price of beer and its taste will also change.

The increasing temperature of the earth and other factors can reduce the number and quality of hop flowers used in making beer, due to which both the price and taste of beer can change.
