If you knead the dough and keep it in the fridge, then obviously the dough will not remain the same as before. Kneading the dough and keeping it in the fridge reduces the quality of the flour. Due to which the dough can become hard and tough. This is the reason why the rotis made from this dough also become hard and tasteless.

The taste of the dough changes when you knead it and keep it in the fridge. While the roti made from fresh dough is very soft and light, the roti made from the dough kept in the fridge tastes a little sour and is tight to eat.

 

Instead of kneading the dough and storing it in the refrigerator, you can try kneading the dough fresh or just letting the dough sit at room temperature for a little while. Keeping the dough in the refrigerator for several hours can ruin its taste.
