What You Need to Make a Chilli Cheese Garlic Paratha :
Wheat flour - 2 cups
Grated mozzarella cheese or processed cheese - 1 cup
Garlic - 2 tbsp (finely chopped)
Green chilies - 2 to 3 (finely chopped)
Chili flakes - 1 tsp
Chopped coriander leaves - 3 tbsp
Butter or Ghee - 3 to 4 tbsp
Salt to taste
Water as needed
Instructions to Make chilli cheese garlic Paratha:

First, take 2 cups of wheat flour in a large mixing bowl. Sprinkle about half a teaspoon of salt, add 1 tsp of melted ghee or oil, and knead into a soft and pliable dough. Add water slowly while mixing, making sure you don’t end up with a sticky dough. Once you have the desired dough consistency, cover it and set it aside for about 10 to 15 minutes.

In a small bowl, mix the 2 tbsp of softened butter with 1 tsp of melted butter, chopped garlic and 1 tbsp of coriander leaves. This will be our aromatic butter spread. Set this aside for later.
Then, in another bowl, take the 1 cup of grated cheese.
Add chopped green chillies, chili flakes, the remaining 2 tbsp of coriander leaves and mix well to prepare your cheese filling.

Now, take one medium portion of the dough and flatten it out with your fingers or roll it lightly on a dusted surface to make a round like a roti. Slather the prepared garlic butter generously all over the rolled dough using a spoon. Sprinkle 2 to 3 spoons of the prepared cheese and chili stuffing over the center of the roti.

Bring the edges of the roti towards the center and pinch them together to seal the stuffing inside, like a small bundle or pouch. Carefully remove any excess dry flour and gently flatten the sealed dough with the palm of your hand.

Roll the flattened dough gently into a thicker paratha, using the dry flour as and when needed to prevent the dough from sticking, and to stop the cheese from leaking. Remember not to roll too thin, as we want those gooey cheese pockets to stay intact.

Heat up a tawa or griddle on medium heat. Once warm, place the rolled paratha on it. Cook for about a minute on one side until a light golden brown color starts to appear, then flip the paratha.

Apply 1 tbsp of butter or ghee generously on this side. Flip the paratha again and spread the remaining butter or ghee on the other side. Keep flipping the paratha from side to side, applying more butter or ghee if necessary, until both sides are beautifully golden brown and crisp, and the cheese has melted to a glorious gooey consistency. Make sure you keep the flame at medium to ensure the cheese melts without burning.
