KFC, Domino's, and Top QSRs Overhaul Kitchen Hygiene Following Strict FDA Crackdowns

In the wake of aggressive nationwide raids and strict regulatory actions by the Food and Drug Administration (FDA) and food safety authorities across states like Maharashtra and Karnataka, major quick-service restaurant (QSR) chains and food brands are drastically overhauling their kitchen hygiene and compliance protocols. With the high-volume festive shopping and dining season fast approaching—a critical period accounting for a major share of annual sales—industry leaders are leaving nothing to chance, instituting unannounced audits, rigorous raw material checks, and transparent customer engagement initiatives to restore public trust.

Stepped-Up Internal Audits and Surprise Franchisee Checks

Prompted by recent state-level crackdowns that resulted in suspended licenses, heavy penalties, and sealed warehouses for regulatory non-compliance, national and regional restaurant chains have tightened internal monitoring frameworks.

Biraja Raut, founder and CEO of Biggies Burgers, highlighted that their dedicated central quality assurance teams are now executing unannounced surprise inspections across both company-owned and franchisee outlets. These rigorous spot-checks focus heavily on verifying the legality and freshness of raw materials, maintaining strict cold-chain protocols, and enforcing uncompromising kitchen cleanliness.

Building Consumer Trust Through Transparency and Kitchen Tours

To counter growing consumer skepticism following recent food safety controversies involving prominent brands—including Domino's and luxury five-star properties in Delhi served with FSSAI notices—industry players are embracing radical transparency.

A spokesperson for KFC India revealed that the brand is actively promoting its existing "kitchen tours," inviting curious customers and food safety advocates to inspect their kitchen operations, ingredient handling, and food preparation protocols firsthand. Similarly, Suhas B. Shetty, founder and CEO of Hyderabad-based Iceberg Organic Ice Creams, confirmed that internal sanitation schedules, equipment cleaning frequency, and staff product-handling protocols have been significantly reinforced to align with stringent food safety mandates.
